“Lights Out!” is one of my favourite signature drinks here at Ricardo’s,” says mixologist Kenton Hrynyk.

Averna, from Sicily, is a popular amaro (Italian for “bitter”), a mixture of spirit, sweetener, and a proprietary blend of herbs and spices. The recipe is a secret but we do know that pomegranate and the essential oils of bitter lemons are included.

“Averna bridges the gap between the rum and the bourbon with allspice, cinnamon and cardamom notes, creating a rich dark sipper for crisp Fall nights,” Hrynyk says. “It is the ultimate winter warmer and night cap.”
