Harissa is a north African condiment made of a paste of chilis and spices. It’s bold flavours are perfect for the summer and go well with all sorts of grilled meat, vegetables, and fish.
6 Tbs (90 mL) extra virgin olive oil
6 cloves garlic, minced
2 Tbs paprika
1 Tbs ground coriander
1 Tbs dried Aleppo pepper
1 tsp ground cumin
¾ tsp caraway seed
½ tsp salt
- Combine all ingredients in a pan and heat until bubbling and very fragrant, or microwave about 1 minute, stirring half way through. Let cool completely.
1/2 cup (120 mL) tahini
1/4 cup (60 mL) fresh lemon juice
1/4 cup (60 mL) extra virgin olive oil
2 Tbs cold water
1 tsp garlic, minced
1 tsp Za'atar
1/2 tsp kosher salt
- Blend all ingredients on medium speed for 30 seconds. If too thick, add additional cold water. Sauce should be smooth.
