Calvados Sidecar

Ingredients

1.5 oz Calvados

.5 oz Cointreau

.5 oz fresh lemon juice

Preparation

  1. Shake and then strain over ice into a sugar rimmed rocks glass.
  2. Calvados and house made tonic
  3. 2 oz Calvados
  4. 1 oz tonic syrup (recipe to follow)
  5. Dash fresh lime juice
  6. Top with soda over ice in a rocks glass, and stir.
  7. “After The Gold Rush” (Sparkling Cocktail)
  8. 1 oz Calvados
  9. .5 oz Tio Pepe Fino sherry
  10. .5 oz ginger liquor
  11. 4 oz Cava
  12. Add all ingredients to a champagne flute, and garnish with a lemon twist.
  13. House made tonic: (Ingredients can be found at specialty grocers such as Community Natural Foods)
  14. 4 cups sugar
  15. 4 cups water
  16. 3 stalks lemongrass, roughly chopped
  17. 3 Tbs citric acid
  18. 3 Tbs cinchona bark
  19. Juice and zest of 3 limes
  20. Combine all ingredients in a pot and bring to a boil. Reduce heat and simmer for 15 minutes, fine strain. Holds for 2 weeks.
