When it’s hot outside, sometimes a cold cocktail with a bite of citrus is just what I’m thirsting for. Not having much of a sweet tooth, my favourite cocktails aren’t usually mouth-puckeringly dry, but have a balance of fruit and acid. North 53’s Encanto is made with pisco, and then brightened with aperol and lemon, which maintains a floral, sensual rose water tone, and the softness of honey. Yes please!
