Pesto Parmesan Stuffed Chicken Wrapped in Prosciutto

Though this dish may sound fancy, it is incredibly easy to prepare and is packed with amazing flavours. Whether you pair this chicken with your favourite salad, rice medley, or risotto, you are sure to impress your guests (and they may just think you spent all afternoon preparing this meal!). 


1 large bunch fresh basil

1 cup pine nuts

1 clove garlic

1 cup Parmesan cheese, grated


Olive oil

4 boneless chicken breasts

8-10 slices of prosciutto


  1. Preheat oven to 375° F
  2. Prepare pesto by pureeing basil, pine nuts, garlic, cheese and olive oil. Season to taste with salt.
  3. Lay two slices of prosciutto flat onto a work surface, overlapping them slightly. Place a chicken breast lengthwise and slit a 5 cm pocket along one side.
  4. Spoon in a generous amount of pesto and then wrap the chicken breast with the two slices of prosciutto. Repeat for the remaining 3 chicken breasts. Bake for 20 minutes.
