This drink is so simple but so unique in its flavor profile.

2oz Bourbon (I use Elijah Craig 12 Year)
1oz Yuzu No Sui - (Yuzu juice)
.75oz Wildflower Honey (1:1 dilution)
- Combine ingredients in shaker. Add ice. Hard shake and fine strain into a chilled coupe. Garnish: Pithless lemon peel.
Optional: Using a dash of floral or fruit bitters - I love it with Vancouver's Apothecary Floral Citrus Bitters
